Full English Breakfast – SW friendly

Ingredients:

  • Eggs, fresh as possible
  • large Tomatoes, halved
  • Back bacon, all visible fat removed
  • Button mushrooms
  • ‘Heck’ chicken sausages (or other low fat ones)
  • Baked beans if required

This is a great take on the Full English breakfast and is one of my favourite ways of starting the day… and it is nearly syn-free on Slimming World !

Mushrooms:  I use button mushrooms. Halve them and put them on a low heat in a small saucepan with just a little water, about 2 tsp. This is just to start them cooking until they start producing their natural juices.

Sausages:  I use Heck chicken sausages as they are very low in fat. Cook in a frying pan with a little fry-light. When cooked wrap in foil to keep warm.

Bacon: Fry in a little fry-light until done. When nearly done add the halved tomatoes face down and cook for about 5 minutes.

Eggs: My favourites are poached eggs but if you prefer fried eggs, heat a pan with a little fry-light over a low heat, crack the eggs in and cover with a lid. This helps to cook the tops of the eggs without the yolk going hard. Cook for about 4 minutes or until the white is just firm.

 

You could also add baked beans if you like. I add a bit of Worcester sauce to mine to give them a bit of an extra flavour boost.
