Every one likes a Pizza but it is not the healthiest food around and so this recipe replaces the pizza base with a butterfly breast of chicken. I suppose it is also a take on Hunters Chicken, but the kids will love it.
Firstly prepare the tomato sauce in a small saucepan. Add the chopped tomatoes, basil, tomato paste and Worcester sauce into a small pan on a medium heat, stir and leave to reduce to a thick paste.
Prepare the chicken by cutting each breast almost in half but putting it on a board, placing your hand on the breast and cutting from the side, leaving a ‘hinge’ on the long side of the breast. Then lay it flat and press gently so that it lays flat.
Transfer the breasts to a baking tray sprayed with Fry-Light and cook in the oven for approx. 10 minutes per side.
Pour any liquid from the baking tray once the chicken is cooked and then spread a layer of the tomato sauce on the chicken. Layer this with the courgette, onion, cherry tomatoes and peppers and then top with the cream cheese.
Return the breasts to the oven, with any spare veg in a separate tray, and cook for about 30 minutes.
Remove them and sprinkle over the grated cheese and cook for another 10 minutes.
The chicken should be cooked through (and quite moist still) and the cheese should be golden on top.
Add the rest of the roasted veg to the plate and enjoy !
